How I calculate this, is I will measure out a small amount like 14 grams (1/2 ounce), if you have a scale, or three feets worth if you don't. I will spin and ply that, and measure the finished amount. Then I can multiply that by the number of grams/ ounces or yards of roving I have.
The problem is that different fiber weigh different amounts, so I think you just have to spin samples. Of course if you keep records, then you can give yourself a good idea of what will yeild what. For instance Merino A roving should be close to Merino B roving and so forth. Also your singles will be roughly twice what your finished plied yarn will be. So if you spin a 18 wpi singles, and get 50 yards, then you know that your plied yarn will be somewhere in the 15-20 yard range. This is because the twisting removes some of the length. Anyway, keeping careful records in a spinning journal will give you some handy insite to the requirements for your next project, even if the wpi or fiber is different, you'll have a place to start.
I use a cheap notebook that has graph paper in it. That way the kids know it's mine and leave it alone, and I can draw things out to scale a bit if I want, or write up charts.
